Ingredients
- 8 cups fresh baby spinach (about 5 oz)
- 1 pint strawberries, hulled and sliced
- ½ cup Medjool dates, pitted and chopped
- ½ small red onion, thinly sliced
- ½ cup crumbled feta cheese
- ⅓ cup roasted almonds, chopped (or swap with pecans/walnuts)
- Dressing
- 3 Tbsp olive oil
- 2 Tbsp balsamic vinegar (or red wine vinegar)
- 1 Tbsp honey (or maple syrup)
- 1 tsp Dijon mustard
- Salt & black pepper, to taste
Directions
- Prepare the dressing
- In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, Dijon, salt, and pepper until smooth.
- Assemble the salad
- Place spinach in a large serving bowl.
- Arrange strawberries, dates, red onion, feta, and almonds on top.
