This low carb instant pot buffalo chicken cauliflower recipe is so simple & fast to make. Be prepared to eat it all.

Ingredients

1 bag of cauliflower rice
-
2 cups chicken, cubed
-
4 strips of thick bacon, cubed
-
1/2 cup buffalo sauce
-
3 tbsp ranch seasoning
-
4 oz cream cheese
-
2 cups shredded fiesta cheese
-
salt & pepper to taste

1 tsp smoked paprika
-
3 celery stalks, chopped
-
green onion. garnish
Directions
Prep your ingredients. On your Instant Pot, turn it to sauté and fry your chopped bacon until cooked through.
Turn sauté off. Add cauliflower rice, chicken, seasonings, buffalo sauce and ranch seasoning to the Instant Pot. Mix together.
Cook using the manual setting for 5 minutes. Allow the Instant Pot to release pressure.
Open and immediately add celery bites, stir in cream cheese. Once fully combined, add fiesta cheese. Stir together. Heat the heat on warm for 8-10 minutes.
Place buffalo mixture into bowl, top with shredded cheese, and garnish with green onion, and drizzle some buffalo sauce. Enjoy!
