A holiday dinner plate built around a perfectly reverse-seared cowboy ribeye seasoned simply with salt, pepper, and olive oil. Served with silky mashed potatoes made from simmered heavy cream, butter, and sour cream, plus sweet corn simmered down with salted butter and cream. A cozy, winter-perfect meal with clean flavors and steakhouse technique.
Ingredients
- Cowboy Steak
- 1 cowboy ribeye, 2–3 lbs, bone-in
- 1 tablespoon olive oil
- 1 tablespoon kosher salt
- 2 teaspoons coarse black pepper
- Mashed Potatoes
- 2 lb baby gold or red potatoes
- ½ to ⅔ cup heavy whipping cream
- 4 to 6 tablespoons butter
- 2 tablespoons sour cream
- 1½ teaspoons kosher salt (plus more to taste)
- Fresh cracked black pepper
- Creamed Sweet Corn
- 3 to 4 cups frozen sweet corn (home-shucked)
- 2 tablespoons salted butter
- ¼ to ½ cup heavy cream
- ½ teaspoon kosher salt
- Optional: cracked pepper
Directions
Cowboy Steak (Reverse Sear Method) Prep the steak Pat dry. Season generously with salt and pepper only.
Rub lightly with olive oil.
- Low oven cook Place on a wire rack over a sheet pan.
- Bake at 250°F until internal temperature reaches:
- 115–120°F for rare
- 125–130°F for medium rare
- 135–140°F for medium
- This takes 35 to 75 minutes, depending on thickness.
- Rest Let the steak rest 10 minutes before searing.
Sear Heat a cast iron pan on high for 3 to 4 minutes. Add a splash of oil.
- Sear each side 45–60 seconds, edges 20–30 seconds.
Final rest Let the steak rest another 10 minutes before slicing. Slice Cut the meat off the bone, then slice against the grain.
- 2. Mashed Potatoes Boil Boil whole potatoes in salted water until fork-tender, 18–25 minutes.
- Steam-dry Drain. Return potatoes to the hot pot (off heat) for 2–3 minutes uncovered to evaporate excess moisture.
Warm the dairy In a small pot, simmer: heavy cream, butter, sour cream
Stir until everything is melted and warm, not boiling. Mash gently Use a potato masher or ricer.
Add half of the warm cream mixture, stir softly, then add more until creamy. Season Salt, pepper to taste.
- 3. Creamed Sweet Corn Simmer Add corn, butter, cream, and salt to a saucepan.
Cook Simmer on medium for 8–12 minutes, stirring occasionally, until the cream lightly thickens and coats the corn. Finish Adjust seasoning with salt and pepper.
