Ingredients
- 1 lb boneless, skinless chicken breast, sliced into thin strips
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional, for depth)
- 1 tablespoon cornstarch
- 1 tablespoon vegetable or avocado oil
- 1 cup green beans, trimmed and cut into 2-inch pieces
- 1 cup diced bell pepper (mix of red, yellow, or orange)
- ½ cup corn kernels (fresh, canned, or frozen)
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced (optional but recommended)
- ½ cup chicken broth or water
- 1 tablespoon rice vinegar
- 1 tablespoon honey or brown sugar
- 2 teaspoons sesame oil
- 3 cups cooked white rice (jasmine or long-grain)
- 3 scallions, thinly sliced for garnish
- Toasted sesame seeds (optional)
Directions
- Marinate the chicken
- In a medium bowl, toss the chicken strips with soy sauce, oyster sauce (if using), and cornstarch. Let it sit while you prep the vegetables.
- Cook the chicken
- Heat a large skillet or wok over medium-high heat. Add the oil, then the chicken. Stir fry until golden and cooked through, about 4–5 minutes. Remove from the pan and set aside.
- Cook the vegetables
- In the same pan, add green beans, bell peppers, and corn. Stir fry for 3–4 minutes until tender-crisp. Add garlic and ginger, cooking for another 30 seconds until fragrant.
- Make the sauce
- In a small bowl, whisk together chicken broth, rice vinegar, honey (or brown sugar), and sesame oil.
- Combine everything
- Return chicken to the pan. Pour the sauce over and toss until everything is coated and heated through, about 2 minutes.
- Serve
- Spoon stir fry over a bed of warm rice. Sprinkle with scallions and sesame seeds before serving.
Recipe Note
Tip: For extra heat, add a teaspoon of chili garlic sauce or sriracha when making the sauce.
