How to Cook Green Beans
There’s more than one way to make green beans shine. Whether you want something vivid and tender or rich and crisp, these four methods give you total texture control, plus nine flavor recipes to build your perfect pile.
1. Steamed
Steamed green beans are tender but not mushy. They hold their shape with a bright color and soft bite.
Time: 4–6 minutes over simmering water
How to: Trim ends. Place in steamer basket over simmering water. Cover and steam until just tender and vibrant green. Remove immediately.
2. Blistered
Blistered beans are smoky and wrinkled with rich flavor. Think dry sear — no water, no oil bath.
Time: 8–10 minutes over high heat
How to: Heat a dry pan until smoking. Add beans in a single layer and let them sit. Turn once blistered. Cook until skin has blackened spots and beans are tender inside.
3. Roasted
Roasting concentrates flavor. You’ll get crisped edges and a gentle chew with caramelized depth.
Time: 15–20 minutes at 425°F
How to: Toss beans with oil and salt. Spread on a parchment-lined pan. Roast until golden, stirring halfway. Add garlic cloves for extra depth.
4. Sautéed
Quick, glossy, and rich. Sautéed beans stay bright with just enough browning for flavor.
Time: 7–8 minutes over medium heat
How to: Heat oil in skillet. Add beans with salt. Sauté until slightly browned, stirring often. Finish with aromatics.
